A response to the post of one Mr. Bryan Bailey on his blog on Friday, April 23, 2004:

Actually, the end piece is often called the "butt" of the loaf, and if you take it out of the bag, then the first piece of real bread is the one that is exposed to the air. This exposure to air and moisture can cause that piece to become stale and moldy faster. So the "butt" piece really protects the entire loaf. Plus, when you live in NYC and are poor like me, you rejoice in the "butt" piece when you don't have any money to buy a new loaf and you're hungry. Just put the "all-crust" side on the inside of the sandwich and you really don't notice the differenct...especially if it's grilled cheese and you've squished it down flat anyway.
